Fiesta!!!
Whether I was cooking with family or friends, I was always around Mexican food growing up. This seasoning pays homage to their passion for cooking as well as a part of my own culture. This seasoning is a blend of our Signature seasoning, chef’s chile powder blend, chef’s celery seasoning salt, Mexican oregano, California paprika, cumin, and chipotle powder. Its great on fajita vegetables, pork, steak, ground meats, chicken, most types of white fish, shrimp, potatoes, rice and grains, as well as beans.
Rub.
Use it as a dry rub, the night before, prior to braising, smoking, or grilling meats and pork. Great on steaks with heavier flavor such as skirt, hanger, and flank.
Marinade.
Use it as a marinade for poultry and seafood an hour prior to cooking. Chef loves it as a substitute for blackening seasoning for his mahi mahi sandwiches.
Season.
Chef uses this seasoning with other combinations to enhance the flavor of his Mexican cuisines such as pazole, chicharron, tacos, flautas, chile relleno, enchiladas, and tamales.
