Angry Gonzo
Habanero Seasoning
This seasoning came from the consistent request of two close friends of mine who I also named the seasoning after. This seasoning packs a pretty hard punch. It will hit you with a lot of sweet and tangy flavors at first, but then, a couple seconds later you feel the heat. And it is really hot. The seasoning itself is dried ground habanero pepper, combined with our Signature seasoning, chef’s chile powder, chef’s lemon zest, and a touch of brown sugar. We suggest you keep this out of the hands of children and irresponsible adults since it is a skin and eye irritant. Test a small amount on your food to see how much you can handle and have a glass of cold milk on hand just in case.
Rub.
Use it as a dry rub on ribs, brisket, and pork butt prior to smoking or braising. Chef uses it as a dry rub on white fish for his grilled fish tacos.
Marinade.
Chef enjoys it in the marinade for ceviche to give it a spicy kick. Use it to flavor a vinaigrette or marinade for chicken. Make a quick hot sauce by combining 2 tablespoons of Angry Gonzo seasoning with a half cup of vinegar.
Season.
Get the party started with some chicken wings. If you are deep frying them add the seasoning as soon as the come out of the oil. If you are baking or grilling them you can add the seasoning before and after cooking. Add it to sour cream or ranch dressing for a spicy dip.
