Island Jerk
Chef has worked with a lot of different people from different islands of the Caribbean, and Jerk seasonings are a pretty big deal in the south as well as parts of Chicago. So, Chef has taken everything he loves about all the different types and styles he has learned over the years and put his own spin on it. Our Island Jerk seasoning combines our Signature seasoning with dried onion, thyme, parsley, chef’s orange zest, habanero peppers, red chilies, paprika, coriander, and some warming spices such as ginger, allspice, nutmeg, clove, and cinnamon.
Rub.
Its pretty obvious what you want to use this seasoning for… jerk chicken. Pork chops are a must as well. Chef loves to rub it on bacon before putting it in the oven
Marinade.
Use as a wet rub for chicken wings prior to grilling. Marinade seafood for an hour prior to cooking.
Season.
Add it to red beans and rice, sweet potatoes, roasted plaintains, or potatoes. Chef likes to grill halved bananas using this seasoning.
